If there is one thing I love to make around Easter, it is carrot cake! I usually make carrot cake for our family on Easter every year, but my favorite part is finding different ways to decorate it. Here is my quick and easy recipe and a few designs from years past. Hopefully, this inspires you to make a similar cake design!
Ingredients we need for this recipe
- 2 cups Cake Flour
- 2 teaspoons Baking Soda
- 1 teaspoon Salt
- 1 tablespoon Cinnamon
- 1/2 teaspoon Ground Ginger
- 1/4 teaspoon Allspice
- 4 large Eggs
- 2 cups Granulated Sugar
- 1 cup Canola Oil
- 4 cups Finely Grated Carrots
How to Bake an Easter Carrot Cake?
First thing first, preheat your oven to 350 F. Grease three 6” inch cake pans. I prefer to use a mixture of equal parts shortening, vegetable oil, and flour to grease my cake pans. Then, in a large mixing bowl, sift together all dry ingredients and set aside.
Now, in another mixer bowl or kitchen aid mixer, mix eggs and sugar on medium-high speed. Once combined, slowly add canola oil. When the wet mixture is thoroughly combined, add finely grated carrots until combined, then slowly add in dry ingredients at a low speed.
Once the batter is thoroughly mixed, transfer it equally to your three 6” inch greased cake pans. Be sure to only fill them halfway to prevent the Cake from overflowing. Then place filled cake pans into your preheated oven and bake for 18-25 minutes or until a toothpick comes out clean.
Once fully baked, transfer the cake pans to a cooling rack and let them cool for 5 minutes in pans before removing them from the pans to cool completely. Removing them from cake pans too early can cause the cake to split in half. Once the cakes have completely cooled, you can start to assemble them.
