Ingredients
For Lemon Blueberry Scones
- 2 1/2 cups all-purpose flour
- 1/4 cup sugar
- 1/2 teaspoon salt
- 2 1/4 teaspoons baking powder
- 6 Tablespoons unsalted butter room temperate
- 3/4 cup fresh blueberries
- 3/4 cup heavy whipping cream
- 1 1/2 teaspoons vanilla extract
- 2 Tablespoons lemon juice
- 2 teaspoons lemon zest
- 2 large eggs
For Lemon Glaze
- 3/4 cups confectioners’ sugar
- 1/2 Tablespoon whole milk
- 1 teaspoon lemon juice
- 1 teaspoon melted butter
- 1/2 teaspoon lemon zest
Directions
How to make scones
Preheat the oven to 400°F. Place Silpat mat or parchment paper on a standard size baking sheet.
Mix together the flour, sugar, salt, and baking powder in a medium bowl. Cut butter into 6 cubes, and add butter one at a time. Use your fingers to work it into the flour mixture as you add the butter. Once the mixture is thoroughly mixed, fold in the blueberries and set aside.
Mix together the heavy cream, vanilla extract, lemon juice, lemon zest, and eggs in a separate bowl. Combine the wet ingredients with the dry ingredients, and slowly stir the mixture together; be careful to not smash any of your fresh blueberries! Once the mixture is combined, it should look like a wet dough.
Transfer the dough onto a generously floured work surface such as a countertop, cutting board, or parchment paper. I can not stress enough that it needs to be generously floured. The dough is extremely wet and difficult to kneed if too moist. Press the dough into an 8-inch circle and make sure to flour both sides of the dough.
Cut the circle into 8 wedges, then place each wedge onto the lined baking sheet. Be sure to space wedges at least 2 inches apart.
If you would like, you can brush the tops of the scones with a small amount of heavy cream before baking. This will give them a light golden tint and prevent them from being too dry. Bake scones for 18-20 minutes. Remove the scones from the oven and place them onto a cooling rack. Once they are completely cooled, add the lemon glaze.
How to make Glaze
Whisk together sugar, milk, lemon juice, melted butter, and lemon zest in a medium bowl until combined.
Drizzle or pipe the Glaze over cooled scones, and enjoy!
