Spring Morning Lemon Tart
When life gives you lemons, make a lemon tart! Honestly, though, who doesn’t love a lemon tart? Whenever I think of lemon tarts, I think of waking up in a warm summer morning, pouring myself a cup of coffee, grabbing a slice of a lemon tart, and sitting outside on my porch with whatever crime murder mystery book (yep, you read that right, pretty much the only kind of books I read). Do you have a dessert like that? One that just brings you back to a certain feeling, season, or time in your life?
Lemon Tart
Crust
Ingredients:
- 1/3 cup sugar
- 1/4 tsp. salt
- 1 1/2 cup all-purpose flour
- 10 Tbsp. cubed butter
- 1 tsp vanilla extract
Directions:
In a food processor, combine sugar, salt, and flour. Once combined, add cubed butter and vanilla. Process until mixture forms a ball. Remove dough from food processor and roll between two sheets of parchment paper into an 8″-9″ circle. Transfer dough to a tart pan. I recommend one with a removable bottom. Press dough against all edges, then trim the top of the edges to remove any excess dough. Chill crust for 1 hour. Bake at 350 degrees for 20 minutes, then let cool.
Homemade whipped cream
Ingredients:
- 2 Tablespoons powder sugar
- 1 cup heavy whipping cream
- 1/2 vanilla extract
- dash of salt
Directions:
Beat all ingredients in a mixer until soft peaks form. Chill until ready to serve on lemon tarts.
Lemon Tart filling
Ingredients:
- 1 1/2 cup sugar
- 1/4 cup all-purpose flour
- 2 eggs
- 3 tsp. lemon zest
- 1/2 cup lemon juice
Directions:
Beat together sugar, flour, eggs, lemon zest, and lemon juice until fully combined. Place tart on a baking sheet and pour filling into tart shell. Bake for 30-30 minutes. Once completely cooled, cut and top with homemade whipped cream. Enjoy!
