Making your Own Royal Icing

When it comes to royal icing, there are a few varieties to choose from. Sometimes, in a pinch, I buy premade ones. This comes in handy when needing to ice a small batch of cookies and not wanting to go through the trouble of measuring everything out. Most premade packets ask that you add water, which makes the whole process super easy! If that’s the route you want to go, here are a few excellent premade options.

Do you want to make them from scratch? Then, here is a super easy and quick recipe!

Ingredients

  • Three egg whites
  • 1 pound confectioner sugar
  • 1 tsp vanilla extract

Directions

In a stand mixer or large mixing bowl, beat egg whites on medium to low speed until frothy. This should take about 1 minute. While the mixer is on low speed, slowly add in the confectioners’ sugar and vanilla. Once thoroughly combined, increase the speed from medium to high speed and beat until stiff, shiny peaks form.

That’s it! Super easy!

Feel free to divide the icing into separate bowls and dye it with food coloring if desired. I recommend food coloring gel vs watery food coloring so that the royal icing keeps its shape. When not using it, make sure to cover it with plastic as it quickly hardens. Transfer to piping bags and decorate cookies.
